Ingredients:

  • 500 g blackcurrants (fresh or frozen)
  • 250 g granulated sugar (1 ¼ cups)
  • 500 ml vodka (or 190-proof neutral spirit) (2 cups)
  • 250 ml water (1 cup)
  • 1 tsp lemon zest (optional for extra flavor)

Instructions:

  1. Clean the blackcurrants, removing any stems and leaves. Optionally, lightly crush to release juices.
  2. In a fermentation jar, combine blackcurrants, sugar, and vodka.
  3. Seal the jar tightly and let it sit in a cool, dark place for 4-6 weeks. Stir the mixture gently every few days, ensuring sugar dissolves.
  4. After the infusion period, strain the mixture through a fine mesh strainer or cheesecloth into a clean container to remove solids.
  5. Stir in the water to balance the liqueur's sweetness and alcohol levels.
  6. Use a funnel to pour the liqueur into dark glass bottles. Seal tightly.
