Ingredients:
- 2 cups cooked and mashed pumpkin (preferably butternut or sugar pumpkin)
- 1 cup granulated sugar
- 1/2 cup coconut milk or heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon powder
- 1/4 teaspoon nutmeg (optional)
- 1/2 cup walnuts, roughly chopped
- 1/4 cup unsweetened shredded coconut (optional)
- 1 tablespoon unsalted butter (for greasing the pan)
Instructions:
- Cook the pumpkin until tender, then mash it until smooth.
- In a medium saucepan, mix the mashed pumpkin, sugar, coconut milk (or cream), vanilla extract, cinnamon, and nutmeg over medium heat. Stir continuously until the mixture thickens about 10-15 minutes.
- Add chopped walnuts and shredded coconut (if using) to the thickened pumpkin mixture. Mix well.
- Grease the baking dish with butter, then pour in the pumpkin-walnut mixture, evenly spreading it out.
- Preheat the oven to 350°F (175°C) and bake for 25-30 minutes, or until the edges are slightly browned and the center is set.
- Allow it to cool completely in the dish before cutting into squares and serving.
