Ingredients:

  • 2 cups (250g) raw mixed nuts (almonds, pecans, cashews, and walnuts)
  • 1 tbsp (15g) unsalted butter, melted
  • 3 tbsp (65g) pure honey
  • 1/2 tsp (3g) sea salt
  • 1/2 tsp (1g) ground cinnamon

Instructions:

  1. Preheat your oven to 325°F (160°C). Note: Proper preheating prevents the honey from pooling
  2. Melt the butter in a small bowl.
  3. Stir the honey, salt, and cinnamon into the melted butter until smooth.
  4. Toss the raw mixed nuts into the honey mixture. Stir until every nut is glossy and coated.
  5. Line a baking sheet with parchment paper.
  6. Spread the nuts in a single layer. Note: Crowding leads to clumping
  7. Roast for 12-15 minutes until the honey is bubbling and fragrant.
  8. Remove from the oven immediately.
  9. Use a spatula to spread the nuts apart until they are individual pieces.
  10. Let them cool completely on the pan until the glaze is hard and crisp.
