Ingredients:
- 1 ½ cups (192g) all-purpose flour, spooned and leveled
- 3 ½ teaspoons baking powder
- ¼ teaspoon salt
- 1 tablespoon (12g) granulated sugar
- 1 large egg
- 1 ¼ cups (300ml) milk
- 3 tablespoons (43g) unsalted butter, melted, plus more for greasing the pan
- 1 teaspoon vanilla extract
- Blueberries, for eyes
- Sliced Strawberries, for ears
- Whipped Cream (optional), for tails
Instructions:
- Whisk together dry ingredients (flour, baking powder, salt, sugar) in a large bowl.
- In a separate bowl, whisk together egg, milk, melted butter, and vanilla extract.
- Gently pour the wet ingredients into the dry ingredients and whisk until just combined. A few lumps are okay – avoid overmixing!
- Preheat a lightly greased griddle or frying pan over medium heat. Test if it is ready by flicking a drop of water. If it sizzles and evaporates, you're good to go.
- Pour batter onto the hot griddle, using a spoon or piping bag to create one large circle for the body and two smaller ovals for the ears, connecting them to the body to make bunny pancakes.
- Cook for 2-3 minutes per side, or until golden brown and bubbles start to form on the surface. Flip gently with a spatula.
- Remove the pancakes from the griddle and decorate with blueberries for eyes, strawberry slices for ears, and a dollop of whipped cream for a tail, if desired.
- Serve immediately. Enjoy these cuties while they're warm!
