Ingredients:

  • 1 ½ cups (192g) all-purpose flour, spooned and leveled
  • 3 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 tablespoon (12g) granulated sugar
  • 1 large egg
  • 1 ¼ cups (300ml) milk
  • 3 tablespoons (43g) unsalted butter, melted, plus more for greasing the pan
  • 1 teaspoon vanilla extract
  • Blueberries, for eyes
  • Sliced Strawberries, for ears
  • Whipped Cream (optional), for tails

Instructions:

  1. Whisk together dry ingredients (flour, baking powder, salt, sugar) in a large bowl.
  2. In a separate bowl, whisk together egg, milk, melted butter, and vanilla extract.
  3. Gently pour the wet ingredients into the dry ingredients and whisk until just combined. A few lumps are okay – avoid overmixing!
  4. Preheat a lightly greased griddle or frying pan over medium heat. Test if it is ready by flicking a drop of water. If it sizzles and evaporates, you're good to go.
  5. Pour batter onto the hot griddle, using a spoon or piping bag to create one large circle for the body and two smaller ovals for the ears, connecting them to the body to make bunny pancakes.
  6. Cook for 2-3 minutes per side, or until golden brown and bubbles start to form on the surface. Flip gently with a spatula.
  7. Remove the pancakes from the griddle and decorate with blueberries for eyes, strawberry slices for ears, and a dollop of whipped cream for a tail, if desired.
  8. Serve immediately. Enjoy these cuties while they're warm!
