Ingredients:
- 1/2 cup uncooked white long-grain rice
- 2 cups water
- 1 cinnamon stick
- 1/4 tsp salt
- 1 can (14 oz) sweetened condensed milk
- 2 cups whole milk
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
Instructions:
- Combine the 100g uncooked rice, 475ml water, cinnamon stick, and 1/4 tsp salt in your saucepan.
- Bring the mixture to a boil over medium high heat.
- Reduce heat to low, cover the pot, and simmer for 15 minutes until the rice is tender and the water is mostly absorbed. Note: Don't peek too often or you'll lose the steam.
- Stir in the 475ml whole milk and 397g sweetened condensed milk.
- Increase the heat to medium low.
- Stir constantly with your whisk or spatula, scraping the bottom of the pot.
- Simmer for 10-12 minutes until the mixture thickens and coats the back of a spoon. Note: Constant stirring is the only way to avoid scorching.
- Remove the pot from the heat immediately.
- Stir in the 1 tsp vanilla extract and 1/2 tsp ground cinnamon.
- Let the pudding sit for 5 minutes to thicken further before you scoop it into bowls.
