Ingredients:

  • 4 ripe bananas (approximately 1 pound or 450 grams)
  • 2 cups (480 ml) vodka (or another neutral spirit)
  • 1 tablespoon (15 ml) pure vanilla extract (optional for added flavor)

Instructions:

  1. Peel and slice the ripe bananas into thin rounds or chunks (approximately 1/4 inch thick).
  2. Place the sliced bananas in a clean, dry glass jar. Pour the vodka over the bananas, ensuring they are fully submerged. Add the vanilla extract if using.
  3. Seal the jar tightly with a lid or cover with plastic wrap. Shake gently to mix the ingredients.
  4. Store the jar in a cool, dark place (e.g., pantry). Shake the jar gently every few days to help release the banana flavors.
  5. After 1–2 weeks, check the flavor. When infusion is to your liking, strain the mixture through cheesecloth or a fine-mesh strainer into a clean bowl. Press the banana solids to extract maximum flavor.
  6. Use a funnel to transfer the strained extract into a dark glass bottle for long-term storage. Keep in a cool, dark place or refrigerate for up to 6 months.
