Ingredients:

  • 1 ½ cups (360ml) Pineapple Juice, chilled
  • ½ cup (120ml) Cream of Coconut (like Coco Lopez), chilled
  • ½ cup (120ml) Pineapple Chunks, frozen
  • 1 cup (240ml) Ice Cubes
  • Optional: 2 tbsp (30ml) Lime Juice, freshly squeezed
  • 2 Pineapple Wedges (optional, for garnish)
  • 2 Maraschino Cherries (optional, for garnish)

Instructions:

  1. In a blender, add the pineapple juice, cream of coconut, frozen pineapple chunks, ice cubes, and lime juice (if using).
  2. Blend on high speed until completely smooth and creamy. If you like a thicker consistency add 1/4 cup more frozen pineapple or 1/2 cup more ice cubes.
  3. Taste and adjust sweetness by adding a touch more pineapple juice or a tiny amount of agave nectar if desired.
  4. Pour into glasses. Garnish with pineapple wedges and maraschino cherries (if using).
