Ingredients:
- 240g chopped Romaine lettuce
- 150g halved cherry tomatoes
- 60g diced cucumber
- 50g thinly sliced red onion
- 15g shredded carrots
- 75g sliced black olives
- 40g sliced pepperoncini peppers
- 60g cubed provolone cheese
- 40g shaved Parmesan cheese
- 60g diced salami or pepperoni (optional)
- 160ml extra virgin olive oil
- 60ml red wine vinegar
- 5g Dijon mustard
- 3g dried oregano
- 3g garlic powder
- 3g salt
- 1g black pepper
- 5g honey or maple syrup
Instructions:
- Wash and dry the Romaine thoroughly. Dice the lettuce, cucumber, and onion into uniform ½-inch pieces.
- Combine all dressing ingredients in a mason jar. Shake vigorously for 30 seconds until the oil and vinegar have merged into a consistent liquid.
- Combine the lettuce and vegetables in a large bowl. Add the cheese, olives, and pepperoncini. Pour the dressing over and toss gently until every leaf is glistening.
