Ingredients:

  • 240g chopped Romaine lettuce
  • 150g halved cherry tomatoes
  • 60g diced cucumber
  • 50g thinly sliced red onion
  • 15g shredded carrots
  • 75g sliced black olives
  • 40g sliced pepperoncini peppers
  • 60g cubed provolone cheese
  • 40g shaved Parmesan cheese
  • 60g diced salami or pepperoni (optional)
  • 160ml extra virgin olive oil
  • 60ml red wine vinegar
  • 5g Dijon mustard
  • 3g dried oregano
  • 3g garlic powder
  • 3g salt
  • 1g black pepper
  • 5g honey or maple syrup

Instructions:

  1. Wash and dry the Romaine thoroughly. Dice the lettuce, cucumber, and onion into uniform ½-inch pieces.
  2. Combine all dressing ingredients in a mason jar. Shake vigorously for 30 seconds until the oil and vinegar have merged into a consistent liquid.
  3. Combine the lettuce and vegetables in a large bowl. Add the cheese, olives, and pepperoncini. Pour the dressing over and toss gently until every leaf is glistening.
