Ingredients:
- 8 oz Extra-Sharp Orange Cheddar, block form
- 4 oz Sharp White Cheddar, block form
- 4 oz Cream Cheese, softened to room temperature
- 0.5 cup High-quality Mayonnaise
- 4 oz Jarred Pimentos, thoroughly drained and minced
- 2 medium Fresh Jalapenos, finely diced and seeds removed
- 1 tsp Worcestershire sauce
- 0.5 tsp Smoked Paprika
- 0.25 tsp Garlic Powder
- 0.25 tsp Cayenne Pepper
- 0.25 tsp Salt
- 0.25 tsp Black Pepper
Instructions:
- Hand-grate the extra-sharp orange cheddar and sharp white cheddar using the large holes of a box grater. Place the shredded cheese in a chilled bowl and set aside.
- In a separate medium mixing bowl, combine the softened cream cheese, mayonnaise, Worcestershire sauce, smoked paprika, garlic powder, and cayenne pepper. Whisk vigorously until the binder is completely smooth and uniform.
- Dice the fresh jalapenos and mince the jarred pimentos. Place them on paper towels and press firmly to remove all excess moisture to prevent the spread from becoming watery.
- Add the dried peppers and the shredded cheeses to the cream cheese mixture. Use a sturdy silicone spatula to fold the ingredients together until fully incorporated, taking care not to mash the cheese shreds.
- Season with salt and cracked black pepper to taste. Serve immediately or refrigerate in an airtight container for better flavor development.
