Ingredients:

  • 1 cup (112g) Almond Flour, blanched, finely ground
  • 1 cup (226g) Cottage Cheese, full-fat, drained slightly if very watery
  • 1 Large Egg
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Garlic Powder (optional)
  • 1/4 teaspoon Salt
  • Everything Bagel Seasoning (approx. 2 tablespoons)
  • Sesame Seeds
  • Poppy Seeds

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour, cottage cheese, egg, baking powder, garlic powder (if using), and salt.
  3. Mix until well combined and a smooth dough forms. The dough will be slightly sticky.
  4. Divide the dough into 4 equal portions. Roll each portion into a rope and join the ends to form a bagel shape.
  5. Brush the bagels with a bit of egg wash (or water) and sprinkle with your choice of toppings (everything bagel seasoning, sesame seeds, etc.).
  6. Bake for 20-25 minutes, or until golden brown.
  7. Let cool slightly on the baking sheet before transferring to a wire rack to cool completely.
