Ingredients:

  • 1 kg (2.2 lbs) frozen French fries or 4 large russet potatoes, cut into fries
  • 2 tbsp vegetable oil (for baking/air frying)
  • 1 tsp fine sea salt
  • 450 g (1 lb) boneless, skinless chicken thighs or breast, cut into 1-inch pieces
  • 1 tbsp neutral cooking oil
  • 3 tbsp Gochujang (Korean chili paste)
  • 2 tbsp soy sauce (low sodium)
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar or honey
  • 1 tsp sesame oil
  • 1/2 tsp ground ginger
  • 1 clove garlic, minced
  • 1/2 cup (120 ml) mayonnaise
  • 2 tbsp Gochujang
  • 1 tsp lemon juice or rice vinegar
  • 1 tsp water (for drizzle consistency)
  • 1 cup (240 ml) chopped, well-drained kimchi
  • 1/2 cup (120 ml) shredded mozzarella or cheddar cheese blend
  • 2 spring onions/scallions, thinly sliced
  • 1 tbsp toasted sesame seeds

Instructions:

  1. Preheat the oven to 220°C (425°F) or the air fryer to 200°C (400°F). Toss the frozen fries with oil (if baking/air frying) and spread them in a single layer. Cook according to package directions (typically 20–30 minutes), flipping halfway, until they are golden brown and perfectly crisp. Transfer the finished fries to a large bowl and immediately toss them with sea salt.
  2. In a small bowl, whisk together the 3 tbsp Gochujang, soy sauce, rice vinegar, brown sugar/honey, sesame oil, ground ginger, and minced garlic. Set aside.
  3. Heat 1 tbsp of neutral cooking oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 5–7 minutes until fully cooked through and slightly browned. Reduce the heat to medium-low. Pour the prepared sauce over the chicken. Stir constantly and cook for 2–3 minutes until the sauce thickens and tightly coats the chicken pieces in a sticky, glossy glaze. Remove from heat.
  4. For the Spicy Gochujang Mayo Drizzle, combine the mayonnaise, 2 tbsp Gochujang, lemon juice, and water until completely smooth and thin enough to drizzle. Chop the kimchi and thinly slice the scallions.
  5. Arrange the hot, crispy fries on an oven-safe serving platter or individual plates. Immediately sprinkle the shredded cheese blend over the top. If desired, place under the broiler for 1-2 minutes to melt the cheese.
  6. Spoon the hot, glazed Gochujang chicken generously over the melted cheese and fries. Drizzle the Spicy Gochujang Mayo over the chicken and top with the chopped kimchi, sliced scallions, and toasted sesame seeds. Serve immediately.
