- 1/4 cup (50g) granulated sugar
- 1 tablespoon lemon juice
- 8 ounces (225g) cream cheese, softened
- 1/2 cup (120ml) heavy cream
- 1/4 cup (50g) powdered sugar, sifted
- 1 teaspoon vanilla extract
- 1 (10-12 ounce / 280-340g) lemon loaf cake, store-bought
- Fresh mint sprigs, for garnish (optional)
Instructions:
- Make the Strawberry Sauce: Combine strawberries, sugar, and lemon juice in a saucepan. Cook over medium heat, stirring occasionally, until strawberries soften and release their juices (about 5-7 minutes). Let cool slightly.
- Prepare the Creamy Filling: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the heavy cream, powdered sugar, and vanilla extract. Beat until light and fluffy.
- Prepare the Lemon Loaf Cake: Cut the lemon loaf cake into 1-inch cubes.
- Assemble the Parfaits: In each parfait glass, layer lemon cake cubes, strawberry sauce (making sure the sauce seeps through), and creamy filling. Repeat layers.
- Chill (Optional): Cover and chill for at least 30 minutes to allow flavors to meld.
- Garnish and Serve: Garnish with fresh mint sprigs, if desired, and serve immediately.
