Ingredients:
- 1 cup (120g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 2 teaspoons (8g) baking powder
- 1/2 teaspoon (2g) baking soda
- 1/4 teaspoon (1.5g) salt
- 1 cup (240g) plain Greek yogurt
- 1 large egg (approx. 50g)
- 3/4 cup (180ml) milk
- 2 tablespoons (30g) unsalted butter, melted and cooled
- 1 teaspoon (5ml) vanilla extract
- 1 tablespoon butter or oil, for greasing
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the Greek yogurt, egg, milk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Don't overmix!
- Heat a lightly oiled griddle or non-stick pan over medium heat.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve hot immediately with your favorite toppings, for example greek yogurt pancakes.
