Ingredients:

  • 1 cup (120g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 2 teaspoons (8g) baking powder
  • 1/2 teaspoon (2g) baking soda
  • 1/4 teaspoon (1.5g) salt
  • 1 cup (240g) plain Greek yogurt
  • 1 large egg (approx. 50g)
  • 3/4 cup (180ml) milk
  • 2 tablespoons (30g) unsalted butter, melted and cooled
  • 1 teaspoon (5ml) vanilla extract
  • 1 tablespoon butter or oil, for greasing

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the Greek yogurt, egg, milk, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Don't overmix!
  4. Heat a lightly oiled griddle or non-stick pan over medium heat.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve hot immediately with your favorite toppings, for example greek yogurt pancakes.
