Ingredients:

  • ¼ cup (60 ml) red wine vinegar (or white wine vinegar for a milder taste)
  • 1 teaspoon (5 g) Dijon mustard
  • 1 clove garlic, minced (about 1 teaspoon)
  • 1 teaspoon (5 g) honey (or maple syrup for a vegan option, if desired)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. In a mixing bowl, add the vinegar, minced garlic, Dijon mustard, and honey.
  2. Gently whisk the mixture until well blended.
  3. Slowly drizzle in the olive oil while continuously whisking to emulsify the dressing.
  4. Taste the dressing and add salt and pepper to your preference.
  5. Transfer the dressing to a storage jar or bottle with a lid. Shake well before serving.
