Ingredients:

- ¼ cup (60 ml) red wine vinegar (or white wine vinegar for a milder taste)
- 1 teaspoon (5 g) Dijon mustard
- 1 clove garlic, minced (about 1 teaspoon)
- 1 teaspoon (5 g) honey (or maple syrup for a vegan option, if desired)
- Salt and freshly ground black pepper to taste
Instructions:
- In a mixing bowl, add the vinegar, minced garlic, Dijon mustard, and honey.
- Gently whisk the mixture until well blended.
- Slowly drizzle in the olive oil while continuously whisking to emulsify the dressing.
- Taste the dressing and add salt and pepper to your preference.
- Transfer the dressing to a storage jar or bottle with a lid. Shake well before serving.
