  • 1/2 cup (60 g) all-purpose flour
  • 1/2 tsp (2 g) baking powder
  • 1 large egg
  • 1/4 cup (60 ml) milk
  • 1/2 tsp (2 g) garlic powder
  • 1/2 tsp (2 g) onion powder
  • Salt and pepper to taste
  • 1/4 cup (30 g) shredded cheese (e.g., cheddar or mozzarella)
  • 1/4 cup (60 ml) hot sauce (e.g., Sriracha, Frank
  • s RedHot)
  • 1 tbsp (15 g) honey
  • 1 tbsp (15 ml) olive oil
  • Optional: pinch of cayenne pepper for extra heat

Instructions:

  1. In a mixing bowl, combine cooked chicken, flour, baking powder, garlic powder, onion powder, salt, and pepper.
  2. In a separate bowl, whisk together the egg and milk, then incorporate into the dry mixture.
  3. Fold in the shredded cheese.
  4. Spoon the batter evenly into the microwave-safe muffin container, filling each cup about 2/3 full.
  5. Microwave on high for 5-7 minutes, checking for doneness (muffins should be firm to the touch and a toothpick should come out clean).
  6. In a small bowl, whisk together hot sauce, honey, olive oil, and optional cayenne pepper until well combined.
  7. Let muffins cool slightly before removing from the container and drizzle or brush with the spicy sauce.
