- 1 large egg
- 1/4 cup (60 ml) milk
- 1/2 tsp (2 g) garlic powder
- 1/2 tsp (2 g) onion powder
- Salt and pepper to taste
- 1/4 cup (30 g) shredded cheese (e.g., cheddar or mozzarella)
- 1/4 cup (60 ml) hot sauce (e.g., Sriracha, Frank
- s RedHot)
- 1 tbsp (15 g) honey
- 1 tbsp (15 ml) olive oil
- Optional: pinch of cayenne pepper for extra heat
Instructions:
- In a mixing bowl, combine cooked chicken, flour, baking powder, garlic powder, onion powder, salt, and pepper.
- In a separate bowl, whisk together the egg and milk, then incorporate into the dry mixture.
- Fold in the shredded cheese.
- Spoon the batter evenly into the microwave-safe muffin container, filling each cup about 2/3 full.
- Microwave on high for 5-7 minutes, checking for doneness (muffins should be firm to the touch and a toothpick should come out clean).
- In a small bowl, whisk together hot sauce, honey, olive oil, and optional cayenne pepper until well combined.
- Let muffins cool slightly before removing from the container and drizzle or brush with the spicy sauce.
