Ingredients:

  • 1 pound ground beef (80/20 blend recommended)
  • 1/2 cup plain bread crumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup ketchup
  • 1 tablespoon packed brown sugar
  • 1/2 teaspoon yellow mustard
  • 1/4 teaspoon Worcestershire sauce
  • Cooking spray (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  2. In a large bowl, gently combine ground beef, bread crumbs, milk, egg, onion, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Don't overmix!
  3. Divide the meatloaf mixture evenly among the muffin cups.
  4. In a small saucepan, whisk together ketchup, brown sugar, yellow mustard, and Worcestershire sauce. Bring to a simmer over medium heat, stirring constantly, until slightly thickened (about 2 minutes).
  5. Spoon a dollop of ketchup glaze over each muffin. Bake for 25-30 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool slightly. Serve warm.
