Ingredients:
- 1 pound ground beef (80/20 blend recommended)
- 1/2 cup plain bread crumbs
- 1/4 cup milk
- 1 large egg
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dried Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup ketchup
- 1 tablespoon packed brown sugar
- 1/2 teaspoon yellow mustard
- 1/4 teaspoon Worcestershire sauce
- Cooking spray (optional)
Instructions:
- Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
- In a large bowl, gently combine ground beef, bread crumbs, milk, egg, onion, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Don't overmix!
- Divide the meatloaf mixture evenly among the muffin cups.
- In a small saucepan, whisk together ketchup, brown sugar, yellow mustard, and Worcestershire sauce. Bring to a simmer over medium heat, stirring constantly, until slightly thickened (about 2 minutes).
- Spoon a dollop of ketchup glaze over each muffin. Bake for 25-30 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool slightly. Serve warm.
