Ingredients:
- 2 lbs (900g) Mixed Berries (strawberries, raspberries, blueberries, blackberries), hulled and roughly chopped if large
- 4 cups (800g) Granulated Sugar
- 1/4 cup (60ml) Fresh Lemon Juice
- 1 Vanilla Bean, split lengthwise and seeds scraped (reserve the pod)
- 1/4 cup (60ml) Water
Instructions:
- Wash and prepare the mixed berries. Chop larger berries into smaller, uniform pieces.
- In a large pot, combine the prepared berries, sugar, lemon juice, water, vanilla bean seeds, and the vanilla bean pod.
- Bring the mixture to a boil over medium-high heat, stirring frequently until the sugar dissolves completely.
- Once boiling, reduce heat slightly to maintain a gentle but consistent boil. Cook, stirring occasionally to prevent sticking, until the jam reaches the desired consistency.
- Test the jam's set by placing a small spoonful on a chilled plate. Let it sit for a minute. If it wrinkles when you push it with your finger, it's ready. If not, continue cooking and test again every few minutes.
- Remove the vanilla bean pod from the jam.
- Carefully ladle the hot jam into the sterilized jars, leaving about 1/4-inch headspace.
- Wipe the jar rims clean, place lids on, and screw on the bands fingertip-tight.
- Allow the jars to cool completely. You should hear a 'pop' sound as the lids seal.
