Ingredients:

  • 2 lbs (900g) Mixed Berries (strawberries, raspberries, blueberries, blackberries), hulled and roughly chopped if large
  • 4 cups (800g) Granulated Sugar
  • 1/4 cup (60ml) Fresh Lemon Juice
  • 1 Vanilla Bean, split lengthwise and seeds scraped (reserve the pod)
  • 1/4 cup (60ml) Water

Instructions:

  1. Wash and prepare the mixed berries. Chop larger berries into smaller, uniform pieces.
  2. In a large pot, combine the prepared berries, sugar, lemon juice, water, vanilla bean seeds, and the vanilla bean pod.
  3. Bring the mixture to a boil over medium-high heat, stirring frequently until the sugar dissolves completely.
  4. Once boiling, reduce heat slightly to maintain a gentle but consistent boil. Cook, stirring occasionally to prevent sticking, until the jam reaches the desired consistency.
  5. Test the jam's set by placing a small spoonful on a chilled plate. Let it sit for a minute. If it wrinkles when you push it with your finger, it's ready. If not, continue cooking and test again every few minutes.
  6. Remove the vanilla bean pod from the jam.
  7. Carefully ladle the hot jam into the sterilized jars, leaving about 1/4-inch headspace.
  8. Wipe the jar rims clean, place lids on, and screw on the bands fingertip-tight.
  9. Allow the jars to cool completely. You should hear a 'pop' sound as the lids seal.
