Ingredients:
- 8 cups popped popcorn (about 1/2 cup unpopped kernels)
- 1 cup unsalted peanuts (150 g)
- 1 cup mixed nuts (almonds, cashews) (150 g)
- 1 cup brown sugar (200 g)
- 1/2 cup unsalted butter (113 g)
- 1/4 cup corn syrup (60 ml)
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips (170 g)
- 1 tablespoon vegetable oil (15 ml)
Instructions:
- Pop popcorn and place it in a large mixing bowl. Set aside.
- Add peanuts and mixed nuts to the bowl with popcorn.
- In a saucepan, combine brown sugar, butter, corn syrup, and salt. Cook over medium heat, stirring constantly until it comes to a gentle boil. Boil for 4-5 minutes without stirring until the mixture thickens (golden color).
- Pour the hot caramel over the popcorn and nuts. Quickly stir using a rubber spatula until everything is evenly coated.
- Spread the mixture onto lined baking sheets. Bake at 250°F (120°C) for 30 minutes, stirring every 10 minutes.
- Melt chocolate chips with vegetable oil in a microwave-safe bowl in 30-second increments. Drizzle melted chocolate over the cooled caramel popcorn mix.
- Allow Moose Munch to cool completely before breaking it into pieces.
- Transfer to a serving bowl or package for gifting.
