  • 1 ½ cups (180g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) unsalted butter, softened
  • 2 large eggs
  • 1 cup (240g) unsweetened applesauce
  • 1 tsp vanilla extract
  • Powdered sugar for dusting
  • Chopped nuts (walnuts or pecans) for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour the cake pan to prevent sticking.
  3. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a separate bowl, cream together softened butter and sugar until light and fluffy.
  5. Beat in the eggs one at a time until fully incorporated.
  6. Mix in the applesauce and vanilla extract until combined.
  7. Gradually add dry ingredients to the wet mixture, folding gently with a spatula until just combined.
  8. Pour the batter into the prepared cake pan, smoothing the top.
  9. Bake in the preheated oven for 35-40 minutes, or until the cake is golden brown and a toothpick inserted in the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes before transferring to a cooling rack. Dust with powdered sugar if desired.
