Ingredients:
- 1.5 cups creamy peanut butter
- 0.5 cup unsalted butter, softened
- 3 cups powdered sugar, sifted
- 1.5 cups crispy rice cereal
- 1 tsp pure vanilla extract
- 0.25 tsp sea salt
- 2 cups semi-sweet chocolate chips
- 1 tbsp vegetable shortening
Instructions:
- In a large mixing bowl, beat the softened butter and peanut butter together until the mixture is pale and completely smooth.
- Gradually add the vanilla and sifted powdered sugar. Fold in the crispy rice cereal by hand until the dough holds together when squeezed.
- Line a baking sheet with parchment paper. Scoop roughly 1 tablespoon of dough and roll into 1-inch balls. Place on the sheet and chill in the refrigerator for 30 minutes.
- Combine chocolate chips and shortening in a microwave-safe bowl. Heat in 30-second intervals, stirring until smooth and glossy.
- Using a fork, dip each chilled ball into the melted chocolate, tapping off excess. Return to the parchment paper and let set until the chocolate is firm.
