Ingredients:

  • 1.5 cups creamy peanut butter
  • 0.5 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1.5 cups crispy rice cereal
  • 1 tsp pure vanilla extract
  • 0.25 tsp sea salt
  • 2 cups semi-sweet chocolate chips
  • 1 tbsp vegetable shortening

Instructions:

  1. In a large mixing bowl, beat the softened butter and peanut butter together until the mixture is pale and completely smooth.
  2. Gradually add the vanilla and sifted powdered sugar. Fold in the crispy rice cereal by hand until the dough holds together when squeezed.
  3. Line a baking sheet with parchment paper. Scoop roughly 1 tablespoon of dough and roll into 1-inch balls. Place on the sheet and chill in the refrigerator for 30 minutes.
  4. Combine chocolate chips and shortening in a microwave-safe bowl. Heat in 30-second intervals, stirring until smooth and glossy.
  5. Using a fork, dip each chilled ball into the melted chocolate, tapping off excess. Return to the parchment paper and let set until the chocolate is firm.
