Ingredients:

  • 2 medium zucchini (approx. 1.3 lbs / 600g), sliced into 1/4 inch rounds or halves
  • 1 tbsp extra virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Wash and dry the zucchini thoroughly. Slice into 1/4-inch thick rounds for chips or slice lengthwise into quarters for fries.
  2. In a large mixing bowl, toss the zucchini slices with olive oil until every piece is glistening.
  3. Sprinkle the Parmesan cheese, garlic powder, salt, and pepper over the zucchini. Toss gently to ensure the cheese adheres to the oil without clumping.
  4. Preheat the air fryer to 400°F (200°C).
  5. Place the zucchini in the basket in a single layer, working in batches if necessary. Cook for 10–12 minutes, shaking the basket halfway through, until edges are golden brown.
