Ingredients:
- 2 medium zucchini (approx. 1.3 lbs / 600g), sliced into 1/4 inch rounds or halves
- 1 tbsp extra virgin olive oil
- 1/4 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
Instructions:
- Wash and dry the zucchini thoroughly. Slice into 1/4-inch thick rounds for chips or slice lengthwise into quarters for fries.
- In a large mixing bowl, toss the zucchini slices with olive oil until every piece is glistening.
- Sprinkle the Parmesan cheese, garlic powder, salt, and pepper over the zucchini. Toss gently to ensure the cheese adheres to the oil without clumping.
- Preheat the air fryer to 400°F (200°C).
- Place the zucchini in the basket in a single layer, working in batches if necessary. Cook for 10–12 minutes, shaking the basket halfway through, until edges are golden brown.
