- 6 Tbsp Unsalted Butter, melted
- 2 (8 oz) packs Cream Cheese, full-fat, softened
- 1 cup Powdered Sugar, sifted
- 1 tsp Vanilla Extract
- 2 tsp Gel Food Colouring (Royal Blue or Navy)
- 1 ½ cups Heavy Whipping Cream, very cold (for filling)
- 1 cup Chocolate Chip Cookies, roughly chopped (for filling)
- 1 cup Heavy Whipping Cream, cold (for topping)
- 2 Tbsp Powdered Sugar (for topping)
- ½ tsp Vanilla Extract (for topping)
- ½ cup Chocolate Chip Cookies, crumbled (for garnish)
Instructions:
- Step 1: Prepare the Crust: Pulse the sandwich cookies in a food processor until fine crumbs form. Combine crumbs with melted butter until the mixture resembles wet sand. Firmly press the crust mixture into the bottom of a 9x13 inch dish. Place the crust in the freezer for 15 minutes.
- Step 2: Create the Mousse Base: In a large bowl, beat the softened cream cheese until completely smooth and lump-free (about 2 minutes). Add the sifted powdered sugar and vanilla extract, beating until just combined. Gradually add the blue gel food colouring until the desired vibrant blue is achieved; mix well.
- Step 3: Whip the Cream: In a separate, clean bowl, whip the 1 ½ cups of cold heavy cream until stiff peaks form.
- Step 4: Assemble the Filling: Gently fold about one-third of the whipped cream into the blue cream cheese mixture to lighten the base. Delicately fold in the remaining whipped cream until no streaks remain. Gently fold in the 1 cup of roughly chopped chocolate chip cookies.
- Step 5: Layer and Chill: Carefully spoon the blue mousse mixture over the chilled cookie crust, spreading it evenly across the pan with a rubber spatula. Cover the dish loosely and refrigerate for a minimum of 4 hours, or ideally, overnight, until the filling is fully set and firm.
- Step 6: Finish and Serve: Just before serving, whip the remaining 1 cup of cold heavy cream with the 2 Tbsp powdered sugar and vanilla until medium-stiff peaks form.
