Ingredients:

  • 1 1/2 cups (150g) Digestive Biscuits (or Graham Crackers), finely crushed
  • 5 tablespoons (70g) unsalted butter, melted
  • 2 tablespoons (30g) granulated sugar
  • 1 cup (240ml) heavy cream, cold
  • 2 tablespoons (25g) powdered sugar
  • 1 teaspoon (5ml) vanilla extract
  • 4 oz (115g) Cream Cheese, softened
  • 1 pound (450g) fresh strawberries, hulled and sliced
  • 2 tablespoons (30g) granulated sugar
  • 1 tablespoon (15ml) lemon juice
  • Fresh Mint for garnish (optional)

Instructions:

  1. Combine crushed digestive biscuits, melted butter, and sugar in a bowl. Mix well until evenly moistened.
  2. Evenly divide and firmly press the biscuit mixture into the bottom of serving bowls or onto a lined platter to form a base.
  3. In a large bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form. In a separate bowl, whip softened cream cheese until smooth. Gently fold the whipped cream into the cream cheese until combined.
  4. In a medium bowl, combine sliced strawberries, sugar, and lemon juice. Gently toss to coat. Let sit for 10 minutes, allowing the strawberries to release their juices.
  5. Spoon or pipe the creamy filling over the biscuit base. Top with the macerated strawberries.
  6. Cover the bites and refrigerate for at least 30 minutes to allow the flavors to meld. Garnish with fresh mint, if desired, and serve chilled.
