Ingredients:
- 1 1/2 cups (150g) Digestive Biscuits (or Graham Crackers), finely crushed
- 5 tablespoons (70g) unsalted butter, melted
- 2 tablespoons (30g) granulated sugar
- 1 cup (240ml) heavy cream, cold
- 2 tablespoons (25g) powdered sugar
- 1 teaspoon (5ml) vanilla extract
- 4 oz (115g) Cream Cheese, softened
- 1 pound (450g) fresh strawberries, hulled and sliced
- 2 tablespoons (30g) granulated sugar
- 1 tablespoon (15ml) lemon juice
- Fresh Mint for garnish (optional)
Instructions:
- Combine crushed digestive biscuits, melted butter, and sugar in a bowl. Mix well until evenly moistened.
- Evenly divide and firmly press the biscuit mixture into the bottom of serving bowls or onto a lined platter to form a base.
- In a large bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form. In a separate bowl, whip softened cream cheese until smooth. Gently fold the whipped cream into the cream cheese until combined.
- In a medium bowl, combine sliced strawberries, sugar, and lemon juice. Gently toss to coat. Let sit for 10 minutes, allowing the strawberries to release their juices.
- Spoon or pipe the creamy filling over the biscuit base. Top with the macerated strawberries.
- Cover the bites and refrigerate for at least 30 minutes to allow the flavors to meld. Garnish with fresh mint, if desired, and serve chilled.
