Ingredients:

  • 1 cup (256g) creamy peanut butter
  • 1/2 cup (170g) honey
  • 1 1/2 cups (120g) rolled oats
  • 1/2 cup (60g) vanilla protein powder
  • 1 tsp (5g) vanilla extract
  • 1/3 cup (55g) mini dark chocolate chips
  • 1/4 tsp (1.5g) fine sea salt

Instructions:

  1. In a large mixing bowl, combine the peanut butter, honey, and vanilla extract. Stir vigorously until the mixture is velvety and completely smooth. Microwave for 15 seconds if the peanut butter is too stiff.
  2. Add the rolled oats, protein powder, and salt to the bowl. Use a spatula to fold the dry ingredients into the wet base until no pockets of dry powder remain and the dough is uniform.
  3. Gently fold in the dark chocolate chips until evenly distributed.
  4. Line a baking sheet with parchment paper. Scoop about 1 tablespoon of dough at a time, roll into a ball between your palms, and place on the sheet.
  5. Refrigerate the bites for at least 30 minutes until firm.
