Ingredients:

  • 1.5 lbs (680g) Salmon fillets, skin on or off, about 1-inch thick
  • 2 tablespoons (30ml) Olive oil
  • 1 Lemon, thinly sliced (plus extra for serving, if desired)
  • 2 cloves Garlic, minced
  • 2 tablespoons (30ml) Fresh parsley, chopped
  • 1 tablespoon (15ml) Fresh dill, chopped
  • 1 teaspoon (5ml) Dried oregano
  • ½ teaspoon (2.5ml) Salt (or to taste)
  • ¼ teaspoon (1.25ml) Black pepper (or to taste)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Pat salmon fillets dry with paper towels. This helps with browning.
  3. In a small bowl, combine olive oil, minced garlic, parsley, dill, oregano, salt, and pepper.
  4. Line baking sheet with parchment paper (if using). Place salmon fillets on the sheet. Drizzle the herb mixture evenly over the salmon. Top with lemon slices.
  5. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Visual Cue: Salmon should be opaque and reach an internal temperature of 145°F (63°C).
  6. Serve immediately with extra lemon wedges, if desired.
