Ingredients:
- 1.5 lbs (680g) Salmon fillets, skin on or off, about 1-inch thick
- 2 tablespoons (30ml) Olive oil
- 1 Lemon, thinly sliced (plus extra for serving, if desired)
- 2 cloves Garlic, minced
- 2 tablespoons (30ml) Fresh parsley, chopped
- 1 tablespoon (15ml) Fresh dill, chopped
- 1 teaspoon (5ml) Dried oregano
- ½ teaspoon (2.5ml) Salt (or to taste)
- ¼ teaspoon (1.25ml) Black pepper (or to taste)
Instructions:
- Preheat oven to 400°F (200°C).
- Pat salmon fillets dry with paper towels. This helps with browning.
- In a small bowl, combine olive oil, minced garlic, parsley, dill, oregano, salt, and pepper.
- Line baking sheet with parchment paper (if using). Place salmon fillets on the sheet. Drizzle the herb mixture evenly over the salmon. Top with lemon slices.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Visual Cue: Salmon should be opaque and reach an internal temperature of 145°F (63°C).
- Serve immediately with extra lemon wedges, if desired.
