Ingredients:
- 1.5 lbs (680g) salmon fillet, skin on or off
- 2 tablespoons (30ml) olive oil
- 1 lemon, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons (30ml) fresh parsley, chopped
- 2 tablespoons (30ml) fresh dill, chopped
- 1 teaspoon (5ml) dried oregano
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C). Line baking sheet with parchment paper (if using). Pat salmon dry with paper towels.
- In a small bowl, combine olive oil, minced garlic, parsley, dill, oregano, salt, and pepper.
- Place salmon on the prepared baking sheet. Brush the lemon-herb mixture evenly over the salmon.
- Arrange lemon slices on top of the salmon fillet.
- Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. Check for doneness by flaking the fish with a fork – it should be opaque and moist.
