Ingredients:

  • 1 pound (450g) fresh green beans, trimmed
  • 1/2 cup (120ml) water
  • 1 teaspoon (5ml) kosher salt
  • 1 tablespoon (15ml) olive oil, extra virgin
  • 1 tablespoon (15ml) lemon juice, freshly squeezed
  • 1/2 teaspoon (2.5ml) lemon zest, finely grated
  • Pinch of freshly ground black pepper

Instructions:

  1. Wash and trim the green beans.
  2. Pour water into the saucepan and place the steamer basket inside. The water level should be below the bottom of the basket.
  3. Bring the water to a boil over medium-high heat. Add the green beans and salt to the steamer basket. Cover the saucepan with a lid. Reduce heat to medium and steam green beans for 5-7 minutes, or until the beans are bright green and crisp-tender.
  4. Test a bean with a fork; it should be tender but still have a slight 'snap.'
  5. While the beans are steaming, whisk together olive oil, lemon juice, lemon zest, and pepper in a small bowl.
  6. Once the beans are cooked, immediately transfer them to the serving bowl. Pour the dressing over the beans and toss gently to combine. Serve immediately.
