Ingredients:
- 1 pound (450g) fresh green beans, trimmed
- 1/2 cup (120ml) water
- 1 teaspoon (5ml) kosher salt
- 1 tablespoon (15ml) olive oil, extra virgin
- 1 tablespoon (15ml) lemon juice, freshly squeezed
- 1/2 teaspoon (2.5ml) lemon zest, finely grated
- Pinch of freshly ground black pepper
Instructions:
- Wash and trim the green beans.
- Pour water into the saucepan and place the steamer basket inside. The water level should be below the bottom of the basket.
- Bring the water to a boil over medium-high heat. Add the green beans and salt to the steamer basket. Cover the saucepan with a lid. Reduce heat to medium and steam green beans for 5-7 minutes, or until the beans are bright green and crisp-tender.
- Test a bean with a fork; it should be tender but still have a slight 'snap.'
- While the beans are steaming, whisk together olive oil, lemon juice, lemon zest, and pepper in a small bowl.
- Once the beans are cooked, immediately transfer them to the serving bowl. Pour the dressing over the beans and toss gently to combine. Serve immediately.
