Ingredients:
- 8 ounces (227g) cream cheese, softened
- 1 (20 ounce / 567g) can crushed pineapple, well-drained
- 1 teaspoon vanilla extract
- 1/2 cup (100g) powdered sugar, sifted
- 1 1/2 cups (120g) shredded coconut, plus extra for rolling
Instructions:
- Drain the crushed pineapple thoroughly using a sieve or cheesecloth. Press to remove excess liquid.
- In a mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the drained pineapple and vanilla extract to the cream cheese. Mix until well combined.
- Gradually add the sifted powdered sugar and 1 1/2 cups shredded coconut to the mixture. Mix until just combined.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the mixture to firm up.
- Using a spoon or small cookie scoop, scoop out portions of the chilled mixture. Roll each portion between your palms to form a ball.
- Roll each ball in the remaining shredded coconut, ensuring it's evenly coated.
- For firmer bliss balls, chill them for another 15-20 minutes before serving.
