Ingredients:

  • 8 ounces (227g) cream cheese, softened
  • 1 (20 ounce / 567g) can crushed pineapple, well-drained
  • 1 teaspoon vanilla extract
  • 1/2 cup (100g) powdered sugar, sifted
  • 1 1/2 cups (120g) shredded coconut, plus extra for rolling

Instructions:

  1. Drain the crushed pineapple thoroughly using a sieve or cheesecloth. Press to remove excess liquid.
  2. In a mixing bowl, beat the softened cream cheese until smooth and creamy.
  3. Add the drained pineapple and vanilla extract to the cream cheese. Mix until well combined.
  4. Gradually add the sifted powdered sugar and 1 1/2 cups shredded coconut to the mixture. Mix until just combined.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the mixture to firm up.
  6. Using a spoon or small cookie scoop, scoop out portions of the chilled mixture. Roll each portion between your palms to form a ball.
  7. Roll each ball in the remaining shredded coconut, ensuring it's evenly coated.
  8. For firmer bliss balls, chill them for another 15-20 minutes before serving.
