Ingredients:
- 4 large eggs
- 1 tablespoon white vinegar
- Water (enough to fill a medium saucepan)
- 4 ounces thinly sliced ham, diced
- 1 tablespoon olive oil
- 1 cup fresh pineapple, diced
- ¼ cup red onion, finely chopped
- 1 tablespoon fresh cilantro, chopped
- Juice of 1 lime
- Salt, to taste
- Pepper, to taste
Instructions:
- In a mixing bowl, combine diced pineapple, red onion, cilantro, lime juice, salt, and pepper. Set aside.
- In a skillet, heat olive oil over medium heat. Add diced ham, sauté until warmed and slightly crispy (about 3-4 minutes). Set aside.
- In a medium saucepan, bring water to a gentle simmer, then add vinegar. Crack each egg into a small bowl; gently slide into simmering water.
- Poach eggs for 3-4 minutes until whites are set and yolks remain runny.
- Place poached eggs on a plate, top with sautéed ham, and spoon pineapple salsa over the top.
- Serve immediately with your choice of side.
