Ingredients:

  • 4 large eggs
  • 1 tablespoon white vinegar
  • Water (enough to fill a medium saucepan)
  • 4 ounces thinly sliced ham, diced
  • 1 tablespoon olive oil
  • 1 cup fresh pineapple, diced
  • ¼ cup red onion, finely chopped
  • 1 tablespoon fresh cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste
  • Pepper, to taste

Instructions:

  1. In a mixing bowl, combine diced pineapple, red onion, cilantro, lime juice, salt, and pepper. Set aside.
  2. In a skillet, heat olive oil over medium heat. Add diced ham, sauté until warmed and slightly crispy (about 3-4 minutes). Set aside.
  3. In a medium saucepan, bring water to a gentle simmer, then add vinegar. Crack each egg into a small bowl; gently slide into simmering water.
  4. Poach eggs for 3-4 minutes until whites are set and yolks remain runny.
  5. Place poached eggs on a plate, top with sautéed ham, and spoon pineapple salsa over the top.
  6. Serve immediately with your choice of side.
