- 4 large eggs (240g)
- 2 tablespoons unsalted butter (28g)
- 1 medium garlic clove, minced (1g)
- 1/4 teaspoon salt (1.5g)
- 1/4 teaspoon black pepper (1g)
- 1/2 cup crumbled goat cheese (120g)
- 1 tablespoon fresh chives, chopped (5g)
- 1 tablespoon fresh parsley, chopped (5g)
- Fresh arugula (optional)
Instructions:
- Gather all ingredients and equipment. Chop fresh herbs and crumble goat cheese.
- Crack eggs into a mixing bowl. Whisk well until combined; season with salt and pepper.
- Heat the skillet over medium heat. Add butter; allow it to melt and bubble. Add minced garlic; sauté for 30 seconds until fragrant.
- Pour beaten eggs into the skillet. Gently stir with a spatula while cooking until the edges start to set, about 2-3 minutes.
- When eggs are still slightly runny, sprinkle crumbled goat cheese on top. Continue cooking until eggs are softly set (1-2 minutes more).
- Fold in chopped chives and parsley before removing from heat. Serve immediately, garnished with additional herbs and arugula if desired.
