Ingredients:
- 6 pieces (approx. 5 oz / 140g each) flatbread
- 2 tbsp olive oil
- 1 cup pizza sauce
- 2 cups shredded low-moisture mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 4 oz sliced pepperoni
- 1 cup sliced bell peppers and red onions
- 1 tbsp honey
- Fresh basil leaves
Instructions:
- Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
- Lightly brush both sides of the flatbread with olive oil.
- Place the flatbreads in the oven for 3–5 minutes until they feel firm to the touch and smell slightly nutty; remove and set aside.
- Spread 2–3 tbsp of sauce over each pre-toasted base, leaving a 1/2 inch border around the edges.
- Sprinkle a light layer of mozzarella cheese first to act as an anchor for the toppings.
- Distribute pepperoni, bell peppers, and red onions evenly across the surface.
- Top with the remaining mozzarella and a dusting of Parmesan cheese.
- Bake for 8–12 minutes until the cheese is bubbling with golden-brown spots and edges are a deep mahogany color.
- Let the pizzas rest for 2 minutes before slicing to allow the cheese to set.
- Garnish with fresh basil leaves and an optional drizzle of honey.
