Ingredients:

  • 6 pieces (approx. 5 oz / 140g each) flatbread
  • 2 tbsp olive oil
  • 1 cup pizza sauce
  • 2 cups shredded low-moisture mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 4 oz sliced pepperoni
  • 1 cup sliced bell peppers and red onions
  • 1 tbsp honey
  • Fresh basil leaves

Instructions:

  1. Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. Lightly brush both sides of the flatbread with olive oil.
  3. Place the flatbreads in the oven for 3–5 minutes until they feel firm to the touch and smell slightly nutty; remove and set aside.
  4. Spread 2–3 tbsp of sauce over each pre-toasted base, leaving a 1/2 inch border around the edges.
  5. Sprinkle a light layer of mozzarella cheese first to act as an anchor for the toppings.
  6. Distribute pepperoni, bell peppers, and red onions evenly across the surface.
  7. Top with the remaining mozzarella and a dusting of Parmesan cheese.
  8. Bake for 8–12 minutes until the cheese is bubbling with golden-brown spots and edges are a deep mahogany color.
  9. Let the pizzas rest for 2 minutes before slicing to allow the cheese to set.
  10. Garnish with fresh basil leaves and an optional drizzle of honey.
