Ingredients:
- 4 slices bacon, preferably thick-cut (approximately 115g)
- 2 tablespoons bacon fat, reserved from cooking bacon (about 30ml)
- 2 tablespoons all-purpose flour (approximately 25g)
- 1 ½ cups brewed strong black coffee (approximately 355ml)
- ½ cup water or chicken broth (approximately 120ml)
- ½ teaspoon black pepper (approximately 2.5ml)
- Pinch of red pepper flakes (optional)
- Salt, to taste
Instructions:
- Cook bacon in the skillet over medium heat until crisp. Remove bacon and set aside, reserving the bacon fat. Crumble or chop the bacon.
- Reduce the heat to medium-low. Add the flour to the reserved bacon fat in the skillet. Whisk constantly until the flour is incorporated and cooked to a light golden brown color (about 1-2 minutes).
- Slowly whisk in the coffee and water, ensuring no lumps form. Continue whisking until the gravy thickens slightly.
- Stir in the black pepper and red pepper flakes (if using). Simmer over low heat for 5 minutes, allowing the flavors to meld.
- Taste and adjust seasoning with salt. Stir in the crumbled bacon. Serve immediately.
