Ingredients:

  • 4 slices bacon, preferably thick-cut (approximately 115g)
  • 2 tablespoons bacon fat, reserved from cooking bacon (about 30ml)
  • 2 tablespoons all-purpose flour (approximately 25g)
  • 1 ½ cups brewed strong black coffee (approximately 355ml)
  • ½ cup water or chicken broth (approximately 120ml)
  • ½ teaspoon black pepper (approximately 2.5ml)
  • Pinch of red pepper flakes (optional)
  • Salt, to taste

Instructions:

  1. Cook bacon in the skillet over medium heat until crisp. Remove bacon and set aside, reserving the bacon fat. Crumble or chop the bacon.
  2. Reduce the heat to medium-low. Add the flour to the reserved bacon fat in the skillet. Whisk constantly until the flour is incorporated and cooked to a light golden brown color (about 1-2 minutes).
  3. Slowly whisk in the coffee and water, ensuring no lumps form. Continue whisking until the gravy thickens slightly.
  4. Stir in the black pepper and red pepper flakes (if using). Simmer over low heat for 5 minutes, allowing the flavors to meld.
  5. Taste and adjust seasoning with salt. Stir in the crumbled bacon. Serve immediately.
