Ingredients:
- 1 ½ cups (150g) graham cracker crumbs
- ¼ cup (56g) unsalted butter, melted
- 2 tablespoons (25g) granulated sugar
- 8 ounces (226g) cream cheese, softened
- ½ cup (113g) granulated sugar
- 1 teaspoon vanilla extract
- 1 cup (237ml) heavy cream, cold
- 1 pint (568g) fresh strawberries, hulled and sliced
- 1 pint (568g) fresh blueberries, rinsed and dried
- Optional: Whipped Cream for topping
Instructions:
- Combine graham cracker crumbs, melted butter, and sugar in a bowl. Mix until well combined and the crumbs are evenly moistened. Set aside.
- In a large bowl, beat softened cream cheese and sugar until smooth and creamy. Add vanilla extract and mix until combined.
- In a separate chilled bowl, beat cold heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture until just combined. Be careful not to overmix.
- In each parfait glass, layer graham cracker crumbs, cheesecake filling, strawberries, and blueberries. Repeat layers, ending with a final layer of fruit on top.
- Cover the parfaits with plastic wrap and chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Top with extra whipped cream (optional) just before serving.
