Ingredients:

  • 6 cups cubed seedless watermelon, chilled
  • 8 ounces feta cheese, crumbled
  • 1/2 cup thinly sliced red onion
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup toasted pine nuts or pepitas (optional)
  • 1 cup balsamic vinegar
  • 1 tablespoon honey (or maple syrup)

Instructions:

  1. Combine balsamic vinegar and honey (or maple syrup) in a small saucepan. Bring to a simmer over medium heat. Reduce heat to low and simmer, whisking occasionally, until the glaze has thickened and coats the back of a spoon (about 8-10 minutes). Let cool completely.
  2. Cube the watermelon. Crumble the feta cheese. Thinly slice the red onion. Chop the mint and basil. Toast pine nuts or pepitas (optional).
  3. In a large bowl, gently combine the cubed watermelon, crumbled feta, sliced red onion, chopped mint, and chopped basil. Toss gently to combine.
  4. Drizzle the cooled balsamic glaze over the salad just before serving. Sprinkle with toasted pine nuts or pepitas, if using.
