Ingredients:
- 6 cups cubed seedless watermelon, chilled
- 8 ounces feta cheese, crumbled
- 1/2 cup thinly sliced red onion
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup toasted pine nuts or pepitas (optional)
- 1 cup balsamic vinegar
- 1 tablespoon honey (or maple syrup)
Instructions:
- Combine balsamic vinegar and honey (or maple syrup) in a small saucepan. Bring to a simmer over medium heat. Reduce heat to low and simmer, whisking occasionally, until the glaze has thickened and coats the back of a spoon (about 8-10 minutes). Let cool completely.
- Cube the watermelon. Crumble the feta cheese. Thinly slice the red onion. Chop the mint and basil. Toast pine nuts or pepitas (optional).
- In a large bowl, gently combine the cubed watermelon, crumbled feta, sliced red onion, chopped mint, and chopped basil. Toss gently to combine.
- Drizzle the cooled balsamic glaze over the salad just before serving. Sprinkle with toasted pine nuts or pepitas, if using.
