Ingredients:

  • 12 oz (340 g) cooked shrimp, peeled and deveined
  • 2 cups (300 g) melon, such as cantaloupe or honeydew, diced
  • 1 cup (150 g) cucumber, diced
  • ½ cup (75 g) red bell pepper, diced
  • ¼ cup (30 g) red onion, finely chopped
  • ¼ cup (10 g) fresh cilantro, chopped
  • 1 avocado, diced
  • 4 tablespoons (60 mL) extra virgin olive oil
  • 2 tablespoons (30 mL) fresh lime juice
  • 1 teaspoon (5 g) honey
  • Salt and pepper, to taste

Instructions:

  1. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper until well combined.
  2. In a large mixing bowl, add cooked shrimp, diced melon, cucumber, bell pepper, red onion, and cilantro.
  3. Drizzle the dressing over the shrimp and melon mixture. Gently toss all ingredients until evenly coated.
  4. Cover the bowl with plastic wrap or a lid and refrigerate for 30 minutes to allow flavors to meld.
  5. Remove salad from the refrigerator, gently stir, and garnish with diced avocado. Transfer to a serving platter or bowl and enjoy chilled.
