Ingredients:
- 12 oz (340 g) cooked shrimp, peeled and deveined
- 2 cups (300 g) melon, such as cantaloupe or honeydew, diced
- 1 cup (150 g) cucumber, diced
- ½ cup (75 g) red bell pepper, diced
- ¼ cup (30 g) red onion, finely chopped
- ¼ cup (10 g) fresh cilantro, chopped
- 1 avocado, diced
- 4 tablespoons (60 mL) extra virgin olive oil
- 2 tablespoons (30 mL) fresh lime juice
- 1 teaspoon (5 g) honey
- Salt and pepper, to taste
Instructions:
- In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper until well combined.
- In a large mixing bowl, add cooked shrimp, diced melon, cucumber, bell pepper, red onion, and cilantro.
- Drizzle the dressing over the shrimp and melon mixture. Gently toss all ingredients until evenly coated.
- Cover the bowl with plastic wrap or a lid and refrigerate for 30 minutes to allow flavors to meld.
- Remove salad from the refrigerator, gently stir, and garnish with diced avocado. Transfer to a serving platter or bowl and enjoy chilled.
