Ingredients:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup unsalted butter
  • 0.25 cup unsweetened cocoa powder (for batter)
  • 1 cup Coca-Cola Classic (for batter)
  • 0.5 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract (for batter)
  • 1.5 cups mini marshmallows
  • 0.5 cup unsalted butter (for glaze)
  • 0.25 cup unsweetened cocoa powder (for glaze)
  • 0.5 cup Coca-Cola Classic (for glaze)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract (for glaze)
  • 1 cup chopped pecans

Instructions:

  1. Preheat your oven to 350°F (175°C) and generously grease and flour a 9x13 inch baking pan.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, and salt until well combined.
  3. In a medium saucepan over medium heat, combine 1 cup butter, 1/4 cup cocoa powder, and 1 cup Coca-Cola. Bring to a rolling boil while stirring occasionally.
  4. Pour the boiling liquid mixture over the dry flour mixture. Whisk until smooth and no flour streaks remain.
  5. Stir in the buttermilk, eggs, and vanilla extract until the batter is glossy. Gently fold in the mini marshmallows.
  6. Pour the batter into the prepared baking pan and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake has 10 minutes left to bake, prepare the glaze by boiling 1/2 cup butter, 1/4 cup cocoa, and 1/2 cup Coca-Cola in a saucepan. Remove from heat and whisk in powdered sugar, vanilla, and pecans until smooth.
  8. Pour the warm glaze over the hot cake immediately after removing it from the oven to allow the frosting to set into the top layer.
