Ingredients:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 tsp baking soda
- 0.5 tsp salt
- 1 cup unsalted butter
- 0.25 cup unsweetened cocoa powder (for batter)
- 1 cup Coca-Cola Classic (for batter)
- 0.5 cup buttermilk
- 2 large eggs
- 1 tsp vanilla extract (for batter)
- 1.5 cups mini marshmallows
- 0.5 cup unsalted butter (for glaze)
- 0.25 cup unsweetened cocoa powder (for glaze)
- 0.5 cup Coca-Cola Classic (for glaze)
- 4 cups powdered sugar
- 1 tsp vanilla extract (for glaze)
- 1 cup chopped pecans
Instructions:
- Preheat your oven to 350°F (175°C) and generously grease and flour a 9x13 inch baking pan.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, and salt until well combined.
- In a medium saucepan over medium heat, combine 1 cup butter, 1/4 cup cocoa powder, and 1 cup Coca-Cola. Bring to a rolling boil while stirring occasionally.
- Pour the boiling liquid mixture over the dry flour mixture. Whisk until smooth and no flour streaks remain.
- Stir in the buttermilk, eggs, and vanilla extract until the batter is glossy. Gently fold in the mini marshmallows.
- Pour the batter into the prepared baking pan and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake has 10 minutes left to bake, prepare the glaze by boiling 1/2 cup butter, 1/4 cup cocoa, and 1/2 cup Coca-Cola in a saucepan. Remove from heat and whisk in powdered sugar, vanilla, and pecans until smooth.
- Pour the warm glaze over the hot cake immediately after removing it from the oven to allow the frosting to set into the top layer.
