Ingredients:
- 1 whole chicken (about 3-4 pounds)
- 2 tablespoons olive oil
- 1 packet of Knorr Spicy Roast Chicken Cook-In-Bag seasoning mix
- Juice of one lemon
- Salt and pepper, to taste
- - For the Vegetables (Optional, for roasting alongside the chicken):
- - 2 medium potatoes, diced into chunks
- - 2 carrots, sliced
- - 1 onion, quartered
- - Fresh herbs (rosemary or thyme), for garnish
Instructions:
- Preheat your oven to 375°F (190°C).
- Rinse the whole chicken under cold water and pat it dry with paper towels. Ensure that you remove any giblets from inside the cavity.
- In a small bowl, combine the Knorr Spicy Roast Chicken seasoning mix with olive oil and lemon juice to create a paste.
- Rub this mixture all over the chicken, making sure you get it under the skin as well for maximum flavor. Season with additional salt and pepper if desired.
- If using vegetables, place them in the bottom of your cook-in-bag or roasting pan. Drizzle them lightly with olive oil and season with salt and pepper.
- Carefully place the seasoned chicken into a large cook-in-bag designed for roasting or directly on top of prepared vegetables in your roasting pan.
- Seal bag according to package instructions—usually by tying securely at both ends—and make several small slits in the bags surface to allow steam to escape during cooking.
- Place sealed bag on a baking sheet for stability then transfer it into your preheated oven.
- Roast for approximately 60 minutes or until internal temperature reaches 165°F (75°C) when measured at thickest part of thigh using instant-read thermometer.
- Once cooked through, carefully remove from oven; let rest inside bag on counter for about 10 minutes before opening — caution as steam will escape!
