Ingredients:
- 2 large sweet red peppers (approximately 300g)
- 200g feta cheese, crumbled
- 2 tablespoons olive oil (30ml)
- 1 clove garlic, minced
- 1 tablespoon fresh lemon juice (15ml)
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Pita chips or fresh vegetables for serving
Instructions:
- Preheat your oven to 200°C (400°F).
- Wash, de-seed, and cut the sweet red peppers into halves.
- Place peppers skin-side up on a baking sheet, drizzle with olive oil, and roast for about 30 minutes until the skin is blistered and charred. Optional: Cover with foil for 10 minutes post-roasting to steam the skin off.
- In a food processor, combine the roasted peppers, feta cheese, garlic, lemon juice, oregano, and a pinch of salt and pepper. Blend until smooth and creamy.
- Taste and adjust seasoning as needed with salt, pepper, or extra lemon juice.
- Transfer the dip to a serving bowl and drizzle with a little more olive oil if desired. Serve with pita chips or vegetables.
