Ingredients:

  • 1 medium-sized sweetmeat squash (approximately 2-3 lbs)
  • 3 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • Salt and black pepper to taste
  • Fresh thyme or rosemary for garnish (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Squash: Carefully slice the sweetmeat squash in half lengthwise using a sharp knife. If you find it difficult, microwave it for about 3 minutes to soften. Scoop out the seeds and stringy fibers from the center using a spoon.
  3. Cut into Wedges: Cut each half into wedges or cubes, depending on your preference.
  4. Seasoning: In a large bowl, combine olive oil, maple syrup, cinnamon, nutmeg, salt, and black pepper. Add the cut squash pieces to the bowl and toss until they are evenly coated with the mixture.
  5. Roasting: Spread the seasoned squash pieces in a single layer on a baking sheet lined with parchment paper for easy cleanup. Roast in preheated oven for about 25–30 minutes until tender and caramelized; turn them halfway through cooking time for even browning.
  6. Serve: Once roasted, remove from oven and let cool slightly before serving. Garnish with fresh thyme or rosemary if desired.
