Ingredients:
- 1 pound (450g) fresh strawberries, washed and thoroughly dried
- 12 ounces (340g) high-quality white chocolate chips (or baking chocolate), divided
- 1-2 teaspoons vegetable oil, divided
- ½ - 1 teaspoon pink gel food coloring
Instructions:
- Wash and thoroughly dry the strawberries. Pat them gently with paper towels.
- Place 9 ounces (255g) of white chocolate chips and 1 teaspoon of vegetable oil in a double boiler or microwave-safe bowl. Melt gently, stirring frequently, until smooth. Stir in the pink gel food coloring until you reach your desired shade of pink.
- Holding each strawberry by the stem, dip it into the melted pink chocolate, coating about ¾ of the strawberry. Gently shake off any excess chocolate.
- Place the dipped strawberries on a parchment paper-lined baking sheet.
- Place the baking sheet in the refrigerator for at least 20-25 minutes, or until the pink chocolate is set.
- Place the remaining 3 ounces (85g) of white chocolate chips and ½ teaspoon vegetable oil in a microwave-safe bowl. Melt gently, stirring frequently.
- Transfer the melted white chocolate to a small piping bag or a ziplock bag with a small corner snipped off.
- Drizzle the melted white chocolate over the chilled pink chocolate-covered strawberries. Get creative with your patterns!
- Return the strawberries to the refrigerator for another 5-10 minutes to allow the white chocolate drizzle to set.
- Enjoy immediately or store in an airtight container in the refrigerator for up to 2 days.
