Ingredients:

  • 1 pound (450g) fresh strawberries, washed and thoroughly dried
  • 12 ounces (340g) high-quality white chocolate chips (or baking chocolate), divided
  • 1-2 teaspoons vegetable oil, divided
  • ½ - 1 teaspoon pink gel food coloring

Instructions:

  1. Wash and thoroughly dry the strawberries. Pat them gently with paper towels.
  2. Place 9 ounces (255g) of white chocolate chips and 1 teaspoon of vegetable oil in a double boiler or microwave-safe bowl. Melt gently, stirring frequently, until smooth. Stir in the pink gel food coloring until you reach your desired shade of pink.
  3. Holding each strawberry by the stem, dip it into the melted pink chocolate, coating about ¾ of the strawberry. Gently shake off any excess chocolate.
  4. Place the dipped strawberries on a parchment paper-lined baking sheet.
  5. Place the baking sheet in the refrigerator for at least 20-25 minutes, or until the pink chocolate is set.
  6. Place the remaining 3 ounces (85g) of white chocolate chips and ½ teaspoon vegetable oil in a microwave-safe bowl. Melt gently, stirring frequently.
  7. Transfer the melted white chocolate to a small piping bag or a ziplock bag with a small corner snipped off.
  8. Drizzle the melted white chocolate over the chilled pink chocolate-covered strawberries. Get creative with your patterns!
  9. Return the strawberries to the refrigerator for another 5-10 minutes to allow the white chocolate drizzle to set.
  10. Enjoy immediately or store in an airtight container in the refrigerator for up to 2 days.
