Ingredients:
- 1 cup (120g) whole wheat flour
- 1 teaspoon (5g) baking powder
- 1/4 cup (50g) unsweetened applesauce
- 1/2 cup (120ml) low-sodium chicken broth
- 1/4 cup (65g) natural peanut butter (no xylitol!)
- 1 large egg
- 1/2 cup (120g) plain, unsweetened Greek yogurt
- Small dog biscuits for decoration (optional)
Instructions:
- Preheat oven to 350°F (175°C). Line muffin tin with parchment paper liners or grease well.
- In a medium bowl, whisk together whole wheat flour and baking powder.
- In a large bowl, whisk together applesauce, chicken broth, peanut butter, and egg until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Divide batter evenly among the prepared muffin cups.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.
- Once completely cooled, top with a dollop of plain Greek yogurt.
- Decorate with small dog biscuits (optional).
- Serve to your happy birthday boy!
