Ingredients:

  • 1 cup (120g) whole wheat flour
  • 1 teaspoon (5g) baking powder
  • 1/4 cup (50g) unsweetened applesauce
  • 1/2 cup (120ml) low-sodium chicken broth
  • 1/4 cup (65g) natural peanut butter (no xylitol!)
  • 1 large egg
  • 1/2 cup (120g) plain, unsweetened Greek yogurt
  • Small dog biscuits for decoration (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Line muffin tin with parchment paper liners or grease well.
  2. In a medium bowl, whisk together whole wheat flour and baking powder.
  3. In a large bowl, whisk together applesauce, chicken broth, peanut butter, and egg until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Divide batter evenly among the prepared muffin cups.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.
  8. Once completely cooled, top with a dollop of plain Greek yogurt.
  9. Decorate with small dog biscuits (optional).
  10. Serve to your happy birthday boy!
