Ingredients:
- 1 box (15.25 oz / 432g) cake mix (chocolate, vanilla, red velvet, etc.)
- ⅓ cup (80ml) vegetable oil (or melted coconut oil)
- 2 large eggs
- ½ cup (60g) powdered sugar, for coating
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, combine the cake mix, oil, and eggs. Mix with an electric mixer (or by hand) until well combined and a soft dough forms.
- Scoop the dough into rounded teaspoons.
- Roll each dough ball generously in powdered sugar, ensuring it's fully coated.
- Place the coated dough balls onto the prepared baking sheet, leaving about 2 inches (5cm) between each cookie. Bake for 10-12 minutes, or until the edges are set and the centers are slightly soft. The tops will have developed characteristic crinkles.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
