Ingredients:

  • 1 box (15.25 oz / 432g) cake mix (chocolate, vanilla, red velvet, etc.)
  • ⅓ cup (80ml) vegetable oil (or melted coconut oil)
  • 2 large eggs
  • ½ cup (60g) powdered sugar, for coating

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, combine the cake mix, oil, and eggs. Mix with an electric mixer (or by hand) until well combined and a soft dough forms.
  3. Scoop the dough into rounded teaspoons.
  4. Roll each dough ball generously in powdered sugar, ensuring it's fully coated.
  5. Place the coated dough balls onto the prepared baking sheet, leaving about 2 inches (5cm) between each cookie. Bake for 10-12 minutes, or until the edges are set and the centers are slightly soft. The tops will have developed characteristic crinkles.
  6. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
