Ingredients:
- 1 pound fresh spinach, stems removed
- 2 tablespoons olive oil
- 3 cloves garlic, thinly sliced
- Salt, to taste
- Freshly cracked black pepper, to taste
- 1 tablespoon lemon juice (optional)
- ¼ cup grated Parmesan cheese (optional)
Instructions:
- Rinse the spinach thoroughly under cold water. Shake off excess water and pat dry with a kitchen towel or paper towel.
- Place a large skillet over medium heat. Add olive oil and warm until shimmering (about 1-2 minutes).
- Add sliced garlic to the skillet once oil is hot. Sauté for 30 seconds until fragrant, being careful not to let it brown.
- Quickly add the spinach to the skillet in a few batches if necessary. Use tongs to toss and coat the spinach in olive oil.
- Sauté for 2-3 minutes until the spinach is wilted and bright green. Season with salt and freshly cracked black pepper to taste.
- If desired, drizzle with lemon juice and sprinkle with Parmesan cheese just before serving. Serve immediately, garnished with additional lemon zest if desired.
