Ingredients:

  • 1 pound fresh spinach, stems removed
  • 2 tablespoons olive oil
  • 3 cloves garlic, thinly sliced
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1 tablespoon lemon juice (optional)
  • ¼ cup grated Parmesan cheese (optional)

Instructions:

  1. Rinse the spinach thoroughly under cold water. Shake off excess water and pat dry with a kitchen towel or paper towel.
  2. Place a large skillet over medium heat. Add olive oil and warm until shimmering (about 1-2 minutes).
  3. Add sliced garlic to the skillet once oil is hot. Sauté for 30 seconds until fragrant, being careful not to let it brown.
  4. Quickly add the spinach to the skillet in a few batches if necessary. Use tongs to toss and coat the spinach in olive oil.
  5. Sauté for 2-3 minutes until the spinach is wilted and bright green. Season with salt and freshly cracked black pepper to taste.
  6. If desired, drizzle with lemon juice and sprinkle with Parmesan cheese just before serving. Serve immediately, garnished with additional lemon zest if desired.
