Ingredients:

  • 1 pound fresh or canned salmon, drained and flaked
  • 1 cup bread crumbs
  • ½ cup finely chopped onion
  • ½ cup finely chopped celery
  • 2 large eggs, beaten
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • ¼ cup mayonnaise
  • 1 tablespoon prepared mustard
  • 1 tablespoon chopped fresh dill

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the loaf pan by lightly greasing it with cooking spray or oil.
  3. In a mixing bowl, combine salmon, bread crumbs, onion, celery, beaten eggs, lemon juice, dill, parsley, salt, and pepper.
  4. Mix well until all ingredients are combined.
  5. Transfer the salmon mixture to the prepared loaf pan, pressing it down gently.
  6. In a separate bowl, mix mayonnaise, mustard, and dill for the topping.
  7. Spread the topping evenly over the salmon mixture.
  8. Bake in the preheated oven for 45 minutes, until the loaf is firm and lightly golden.
  9. Let cool for 10 minutes before slicing and serving.
