- 1 pound fresh or canned salmon, drained and flaked
- 1 cup bread crumbs
- ½ cup finely chopped onion
- ½ cup finely chopped celery
- 2 large eggs, beaten
- 2 tablespoons lemon juice
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- ¼ cup mayonnaise
- 1 tablespoon prepared mustard
- 1 tablespoon chopped fresh dill
Instructions:
- Preheat the oven to 350°F (175°C).
- Prepare the loaf pan by lightly greasing it with cooking spray or oil.
- In a mixing bowl, combine salmon, bread crumbs, onion, celery, beaten eggs, lemon juice, dill, parsley, salt, and pepper.
- Mix well until all ingredients are combined.
- Transfer the salmon mixture to the prepared loaf pan, pressing it down gently.
- In a separate bowl, mix mayonnaise, mustard, and dill for the topping.
- Spread the topping evenly over the salmon mixture.
- Bake in the preheated oven for 45 minutes, until the loaf is firm and lightly golden.
- Let cool for 10 minutes before slicing and serving.
