- 1/4 teaspoon black pepper
- Fresh parsley, chopped (for serving)
Instructions:
- In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, smoked paprika, salt, and pepper to prepare the marinade.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes or up to overnight.
- Preheat the oven to 400°F (200°C).
- Place marinated chicken thighs in a baking dish, drizzle with remaining marinade, and bake for 30-35 minutes until internal temperature reaches 165°F (75°C).
- Remove from oven, let rest for 5 minutes, then sprinkle with chopped parsley and serve.
