  • 4 boneless skinless chicken thighs (about 1.5 lbs or 680g)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for serving)

Instructions:

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, smoked paprika, salt, and pepper to prepare the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes or up to overnight.
  3. Preheat the oven to 400°F (200°C).
  4. Place marinated chicken thighs in a baking dish, drizzle with remaining marinade, and bake for 30-35 minutes until internal temperature reaches 165°F (75°C).
  5. Remove from oven, let rest for 5 minutes, then sprinkle with chopped parsley and serve.
