Ingredients:
- 3 to 4 pounds beef tenderloin
- 2 tablespoons olive oil
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 teaspoons garlic powder
- 1 teaspoon dried thyme
- 1 cup heavy cream
- 4 ounces blue cheese, crumbled
- 2 tablespoons unsalted butter
- 1 tablespoon Worcestershire sauce
- Freshly ground black pepper, to taste
Instructions:
- Preheat the oven to 400°F (200°C). Pat the beef tenderloin dry with paper towels. Rub olive oil, salt, pepper, garlic powder, and thyme all over the beef.
- Heat an oven-safe skillet over medium-high heat. Once hot, sear the beef on all sides until browned (about 2-3 minutes per side).
- Transfer the skillet to the preheated oven. Cook until the internal temperature reaches 135°F (57°C) for medium-rare, approximately 25-30 minutes, or longer for desired doneness.
- In a medium saucepan, melt the butter over medium heat. Add the heavy cream and Worcestershire sauce, stirring gently. When warm, add the crumbled blue cheese and whisk until creamy and smooth. Season with black pepper to taste.
- Remove the beef from the oven and let it rest for 30 minutes before slicing.
- Slice the beef into thick pieces and drizzle with blue cheese sauce. Enjoy!
