Ingredients:

  • 1 ¾ cups all-purpose flour (220 g)
  • 1 tsp instant yeast (5 g)
  • ½ tsp salt (2.5 g)
  • ¾ cup warm water (180 ml)
  • 1 tbsp olive oil (15 ml)
  • 8 oz shiitake mushrooms, sliced (225 g)
  • 1 tbsp olive oil (15 ml)
  • 2 cloves garlic, minced
  • 1 tsp fresh oregano, chopped (5 g)
  • 1 tsp fresh thyme, chopped (5 g)
  • 1 cup mozzarella cheese, shredded (100 g)
  • ¼ cup freshly grated Parmesan cheese (25 g)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. In a large mixing bowl, combine flour, instant yeast, and salt.
  2. Gradually add warm water and olive oil; mix until a dough forms.
  3. Knead for about 5 minutes until smooth; let rise in a warm place for about 15 minutes.
  4. Heat olive oil in a sauté pan over medium heat.
  5. Add sliced shiitake mushrooms; sauté for 5-7 minutes until golden brown.
  6. Stir in minced garlic, oregano, thyme, salt, and pepper; cook for an additional 2 minutes.
  7. Preheat the oven to 475°F (245°C).
  8. Flour your work surface and roll out the dough to your desired thickness.
  9. Transfer the dough to a baking sheet lined with parchment or a pizza stone.
  10. Spread the sautéed shiitake mixture evenly over the dough.
  11. Sprinkle mozzarella and Parmesan cheese on top.
  12. Bake in the preheated oven for 10-12 minutes, or until the crust is golden brown and the cheese is bubbly.
  13. Remove from the oven and let cool slightly before slicing.
  14. Top with fresh basil leaves and a drizzle of olive oil if desired.
