Ingredients:
- 3 large eggs
- 1 cup whole milk
- 1 cup heavy cream
- 1 container (16 oz) full-fat cottage cheese
- 1/4 cup grated Parmesan cheese, plus extra for topping
- 1 tablespoon Dijon mustard
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/4 teaspoon ground nutmeg
- Salt and freshly ground black pepper to taste
- 1 cup chopped cooked bacon or ham
- 1 cup chopped cooked spinach, well-drained
- 1/2 cup chopped sun-dried tomatoes, oil-packed, drained
- Optional: Fresh herbs for garnishing (chives, parsley)
Instructions:
- Sauté chopped onion in a small amount of oil until softened, then add garlic and cook for another minute. Let cool slightly.
- In a large bowl, whisk together eggs, milk, cream, cottage cheese, Parmesan cheese, and Dijon mustard.
- Stir in the sautéed onion and garlic, nutmeg, salt, and pepper.
- Gently fold in the cooked bacon or ham, spinach, and sun-dried tomatoes.
- Pour the mixture into a greased 9-inch pie dish. Sprinkle with extra Parmesan cheese.
- Bake in a preheated oven at 375°F (190°C) for 40-45 minutes, or until the quiche is set and golden brown on top. A knife inserted near the centre should come out clean.
- Let the quiche cool slightly before slicing and serving. Garnish with fresh herbs if desired.
