Ingredients:

  • 3 large eggs
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 container (16 oz) full-fat cottage cheese
  • 1/4 cup grated Parmesan cheese, plus extra for topping
  • 1 tablespoon Dijon mustard
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground nutmeg
  • Salt and freshly ground black pepper to taste
  • 1 cup chopped cooked bacon or ham
  • 1 cup chopped cooked spinach, well-drained
  • 1/2 cup chopped sun-dried tomatoes, oil-packed, drained
  • Optional: Fresh herbs for garnishing (chives, parsley)

Instructions:

  1. Sauté chopped onion in a small amount of oil until softened, then add garlic and cook for another minute. Let cool slightly.
  2. In a large bowl, whisk together eggs, milk, cream, cottage cheese, Parmesan cheese, and Dijon mustard.
  3. Stir in the sautéed onion and garlic, nutmeg, salt, and pepper.
  4. Gently fold in the cooked bacon or ham, spinach, and sun-dried tomatoes.
  5. Pour the mixture into a greased 9-inch pie dish. Sprinkle with extra Parmesan cheese.
  6. Bake in a preheated oven at 375°F (190°C) for 40-45 minutes, or until the quiche is set and golden brown on top. A knife inserted near the centre should come out clean.
  7. Let the quiche cool slightly before slicing and serving. Garnish with fresh herbs if desired.
