Ingredients:

  • 1/4 ounce Absinthe (or Herbsaint)
  • 1 sugar cube (or 1/2 teaspoon granulated sugar)
  • 3 dashes Peychaud's Bitters
  • 1 dash Angostura Bitters
  • 2 ounces Rye Whiskey
  • Lemon peel, for garnish

Instructions:

  1. Chill the Glass: Fill an Old Fashioned glass with ice. Let it sit while you prepare the cocktail.
  2. Absinthe Rinse: Discard the ice from the glass. Pour absinthe into the glass, swirl to coat the inside completely, and discard any excess absinthe.
  3. Muddle: In a separate mixing glass, place the sugar cube (or sugar) and bitters. Muddle until the sugar is dissolved.
  4. Add Whiskey and Ice: Add the rye whiskey to the mixing glass. Fill with ice.
  5. Stir (Don't Shake!): Stir well for about 30 seconds to chill and slightly dilute the cocktail.
  6. Strain: Strain the mixture into the prepared, absinthe-rinsed Old Fashioned glass.
  7. Garnish: Express the oils from a lemon peel over the drink by twisting the peel. Rub the peel around the rim of the glass. Discard the peel.
