Ingredients:
- 5 oz (140g) Mixed Greens
- 1 cup (100g) Arugula or Rocket
- 1/2 cup (75g) Radishes, thinly sliced
- 1/2 cup (50g) Cucumber, thinly sliced
- 1/4 cup (30g) Red Onion, thinly sliced
- 1/4 cup (40g) Cherry Tomatoes, halved
- 1/4 cup (30g) Feta Cheese, crumbled (optional)
- Edible flowers (optional)
- 3 tablespoons (45ml) Extra Virgin Olive Oil
- 2 tablespoons (30ml) Fresh Lemon Juice
- 1 tablespoon (15ml) Honey
- 1 teaspoon (5ml) Dijon Mustard
- Salt and Freshly Ground Black Pepper to taste
Instructions:
- Wash and slice all vegetables according to the ingredient list. Soak red onion to soften the bite.
- In a small bowl, whisk together olive oil, lemon juice, honey, and Dijon mustard. Season with salt and pepper to taste. Whisk until emulsified.
- In a large salad bowl, combine mixed greens, arugula, radishes, cucumber, red onion, and cherry tomatoes.
- Drizzle the vinaigrette over the salad. Toss gently to coat.
- Sprinkle with feta cheese (if using) and edible flowers (if using). Serve immediately.
