Ingredients:

  • 5 oz (140g) Mixed Greens
  • 1 cup (100g) Arugula or Rocket
  • 1/2 cup (75g) Radishes, thinly sliced
  • 1/2 cup (50g) Cucumber, thinly sliced
  • 1/4 cup (30g) Red Onion, thinly sliced
  • 1/4 cup (40g) Cherry Tomatoes, halved
  • 1/4 cup (30g) Feta Cheese, crumbled (optional)
  • Edible flowers (optional)
  • 3 tablespoons (45ml) Extra Virgin Olive Oil
  • 2 tablespoons (30ml) Fresh Lemon Juice
  • 1 tablespoon (15ml) Honey
  • 1 teaspoon (5ml) Dijon Mustard
  • Salt and Freshly Ground Black Pepper to taste

Instructions:

  1. Wash and slice all vegetables according to the ingredient list. Soak red onion to soften the bite.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, and Dijon mustard. Season with salt and pepper to taste. Whisk until emulsified.
  3. In a large salad bowl, combine mixed greens, arugula, radishes, cucumber, red onion, and cherry tomatoes.
  4. Drizzle the vinaigrette over the salad. Toss gently to coat.
  5. Sprinkle with feta cheese (if using) and edible flowers (if using). Serve immediately.
